Vegan Rice Pudding with Bananas – Cuenca, Ecuador

Rice pudding is one of my favorite desserts (or at least… it’s one of my favorite non-chocolate desserts), and it brings back memories of eating out at an Indian restaurant when my family went on weekend outings to the Big City. Finally, I’ve made yummy, creamy vegan rice pudding that can be enjoyed as a snack, dessert, or breakfast!

This rice pudding is made with bananas, but feel free to add raisins, coconut shreds, or any other special dessert-type addition that trips your trigger.

Ingredients

  • 1 3/4 Cups Cooked Rice
  • 1 Banana, sliced
  • 2 Tsp Cinnamon
  • 1/2 Tsp Himalayan Pink Sea Salt
  • 1 Tsp Vanilla Extract
  • 1/2 Cup Coconut Milk, full fat
  • 1 1/2 Cups Water
  • 10-15 Stevia Drops
  • 1 TBSP Coconut Oil
